For our sixth anniversary bottle we blended imperial stouts that aged in Willett barrels for 23 months. We then laid out six adjuncts we wanted to highlight in this beer: Madagascar vanilla from Sava Trading Co., Ecuadorian cacao, cinnamon, and a blend of ancho, guajillo, and puya chiles. As some of you know, we’ve made stouts with chile before, but nothing like this. This beer reminds us of Mexican hot chocolate with rich notes of cocoa, dark fruits, spice, and a building chile character that doesn’t linger too long :) Disclaimer: if you don’t like chiles and spice character this beer may not be your jam, but for those that enjoy dipping your toes in the fire, you’re in luck!
